This Bittersweet Life

I love carbs.  I mean I really love carbs.  Pasta, bread, bagels, pasta...did I mention how much I love pasta?  As I watched the numbers on the scale slowly go up over the years, I've come to realize that my metabolism just can't handle the amount of starchy carbs I've been eating.


Gone are the days when I'd have an English muffin for breakfast, a bagel sandwich for lunch and some sort of dish with pasta...or heaven forbid, a grilled cheese sandwich on slices of French bread.  I've been limiting my starchy carb intake and amping up my fresh fruits and veggies as well as my protein.  I've added things like chia seeds to my diet.  Now, hard boiled eggs are a good snack instead of some crackers.  (Sorry, rosemary and olive oil Triscuits!  I do miss you!)

To help with the change in diet, my mom and I purchased the Nutra Ninja Nutra Bowl Duo so we could start making healthy breakfast smoothies.  (We aren't getting paid by Ninja for this blog post, so what follows is my honest opinion.) I had been pinning healthy smoothie recipes for days in anticipation.  So as soon as it arrived in the mail I unpacked it and got it all set up.  I even looked through the recipe book that came with it.


And I of course had to make my first smoothie not long after that. I was inspired!  I read through the directions on how to use the system, filled my cup the correct way (fresh on the bottom, liquids, sticky stuff, then frozen), twisted on the blender blades and snapped it into the base unit.

This system is easy to use with the Auto-iQ technology.  I selected the boost because I had some seedy fruits then hit the smoothie button.  WHOA!  I thought the blender was going to lift off like a rocket!  This little baby has some serious power behind it at 1200 watts.  No wonder why the base had suction cups on the bottom to stick it to the countertop!


The result was a perfectly blended smoothie.  No chunks and most of the seeds were ground up well into fine little bits. No yogurt was stuck to the sides of the cup unblended.  It was really quite amazing compared to our old blender.      

Ever since, I've made myself a smoothie nearly every morning for breakfast.  Occasionally I will let myself have something starchy or I'll opt for something with eggs, but as a lover of all things fruit, I have really been enjoying these smoothies!


And with the two cups that come with the system, both my mom and I can enjoy a smoothie in the morning.  We have even pre-prepped smoothies the night before, sticking the cups in the fridge.  In the morning we add some ice and blend.  The results were just as perfect.

I really love tart things.  It's an inherited trait.  As a young girl, my Oma loved to eat lemons like oranges.  So any chance I get to have tart citrus fruits, I'm all in.  This particular recipe can be sweetened up to taste by adding honey if you aren't a sour puss like me.

I just love the dark pink color of this smoothie!  And the tart flavor mixed with sweet fruits is so much better than the faux taste of cherry limeade drinks you get at fast food joints, plus it's way healthier.  The chia seeds give you an added boost of omega-3 fatty acids, antioxidants, fiber, iron and calcium.  Limes aid in digestion, cherries and pomegranate seeds are packed with antioxidants and the blueberries and blackberries have vitamin C.

Cherry Lime Tropical Smoothie

Recipe by This Bittersweet Life
Prep time: 2 minutes
Cook time: 2 minutes
Total time: 4 minutes
Yield: 1
Ingredients
  • 1 Lime or key lime
  • 4 oz. tart cherry or key lime yogurt
  • 1 tsp. chia seeds
  • 3/4 cup orange juice
  • 6 frozen whole cherries, pitted
  • 1/8 cup frozen blueberries and blackberries
  • 3 tbs. frozen pomegranate seeds
  • 4 chunks frozen mango
  • 3 chunks pineapple
  • honey to taste (optional)
Directions
  1. Cut the lime in half. Peel one half and place slices in blender. Juice the other half.
  2. Add all of your other ingredients.
  3. If you use fresh fruit, add ice to make your smoothie cold.
  4. Blend and enjoy!

I love a good excuse to throw a party with yummy food.  So in conjunction with Alice Scraps Wonderland, I threw a premier party for Shadowhunters, a television show on Freeform (the new name for ABC Family) based of the world-wide bestselling book series The Mortal Instruments by Cassandra Clare.

I'm a huge fan of the books and so I picked out foods mentioned in the series or foods that seemed to fit a character's personality to serve at my party. Alice Scraps Wonderland made some fun food name cards to label the different foods on the buffet table and has been making beautiful mixed media Shadowhunters inspired tags that are perfect to display on a buffet table full of food!


In the first book, The City of Bones, Jace pulls a tub of leftover spaghetti out of the fridge that is clearly labeled with Hodge's name when he sees Isabelle attempting to make dinner.  (Apparently Izzy can't cook and no one at the Institute wants to eat the food she makes.)  So my mom, Sylvia, made her famous lasagna sauce (a super secret family recipe--sorry!) and boiled some spaghetti noodles and I labeled it "Hodge's Favorite Spaghetti."  We also added a little shredded fresh parmesan to the mix!  And since garlic bread goes wonderfully with spaghetti, we made some and I decided to name it "Simon's Anti Vampire Garlic Bread."  It's perfect for the nerdy boy who believes garlic might save him from those bloodsucking nighttime monsters.  I also made a mixed green salad topped with apples, strawberries, dried cranberries and sunflower seeds.  With all the fruit it was quite magical for this time of year so it was bestowed the namesake of "Magnus' Magical Salad."  And I bought some Izze sodas (because of Izzy, duh!) to wash it all down with.  I really wanted some blackberry flavored Izze sodas to mirror the sultry color of Izzy's lipstick in the TV show, but my local grocery store was out so I went with grapefruit--a pretty girly pink, plus clementine because it's one of my favorites!


For dessert I chose to make some vanilla cupcakes iced with my favorite buttercream (chocolate cherry) that I tinted black.  I sprinkled on a few white candy pearls and made angelic runes with melted white chocolate to place on top of the cupcakes.  I labeled these "Clary's Artistic Angelic Rune Cupcakes" because in the beginning of the show, Clary doodles Shadowhunter runes without knowing what she is doing.  In one of the later books in the series, Jace mentions he likes mangos so I picked up a mango sorbet and a mango sorbetto.  We all know Jace is charming and smooth so I labeled this "Jace's Smooth Mango Sorbet."  I served up a scoop of the cold yummy goodness in a chilled martini glass.  In the books, Madame Dorothea (known as Dot in the TV show) asks Jace and Clary if they would like tea when they came to visit her in the first book.  Jace tells her anything but Earl Grey because he hates bergamot.  So I found a Mortal Cup-like chalice in my Oma's china cabinet and stuffed it with bags of Tazo's Earl Grey tea.  I pulled out some of my sister's vintage teacups and a teapot as well.


As for tablescaping, I used a black tablecloth with a white and silver table runner.  I always like differences in hight when setting up a buffet table.  It's very artistic and pleasing to the eye.  So I used one of my Oma's fancy cake stands to hold the cupcakes up high and propped the salad bowl up on a short vase turned upside down and stuffed with a silver organza napkin and a strand of glimmer lights.  I also added silver mercury glass candle pedestals and candles then placed the tags created by Alice Scraps Wonderland around the table.

I have made this meal three times now, so I felt pretty confident making it again.  I've based my own recipe from Rita's Recipes Crock Pot Cream Cheese Chicken Chile [sic].  I followed it pretty closely, but you will see where I made some changes.  

I was smart this time and put this meal together the night before (this bit of advice is really from my mother).  I started by adding 2 frozen chicken breasts to the bottom of the slow cooker bowl.  Then I added the beans, corn, Rotel tomatoes and cream cheese.  I put the cover on and stuck the bowl in the fridge overnight.

I measured out the spices and stuck them in a small plastic zip top bag for the morning.  Better safe than sorry with a dog that likes to eat bacon off my counters and tables!  As always, I add more spice than what is called for, so my recipe below has a measurement range for the spices, so you can add them to taste.  I've also used a Chipotle Spiced Ranch Dressing Mix that makes it taste wonderful too.  This recipe is so simple it's easy to experiment with the flavors.

Before going to work I took the pot out of the fridge and placed it in the slow cooker and threw the spice in the pot and put it on low for eleven hours. I work an eight hour day so I figured eleven hours on low would give me two extra hours cook time so I could take the dogs out to the dog park for a good run, set the table plus have some down time.

At the end of the cook time, you should be able to shred the chicken breasts with two forks and mix it all together. However, next time I'll do a shorter cook time because it cooked so long that it got a little dry and my husband had to add some broth to it.

I was thinking I would add chicken broth or even a can of creamy soup to it next time to make it more like a soup. But when I make it thick my husband loves to put it in tortillas.

So for our meal, we topped the chili with sour cream and paired it with chips and guacamole!

Easy Crockpot Cream Cheese Chicken Chili

Recipe by This Bittersweet Life
Prep time: 5 minutes
Cook time: 6-8 hours
Total time: 6-8 hours
Yield: 6-8 servings


Ingredients
  • 2 Chicken Breasts, frozen
  • 1 Can Black Beans, drained and rinsed
  • 1 Can Corn, un-drained
  • 1 Can Rotel Tomatoes, un-drained
  • 1 Package Ranch Dressing Mix
  • 1 to 2 tsp Cumin
  • 1 to 1 & 1/2 tbsp Chili Powder
  • 1 to 2 tsp Onion Powder
  • 1 8 oz. Package Light or Regular Cream Cheese
  • 1 quart Chicken Broth (optional)
  • 4 to 8 Tortillas
  • Tortilla or Corn Chips
  • Sour Cream
  • Guacamole
Cooking Directions
  1. Place frozen chicken breasts into the bottom of the slow cooker bowl.
  2. Top with drained and rinsed beans, corn plus liquid, tomatoes plus liquid and seasonings.
  3. Add the optional chicken broth if you would like to make this a soup, stir.
  4. Add the cream cheese and set to cook on low for 6 to 8 hours.
  5. About 2 hours into the cook time stir to blend in cheese, or stir as soon as you can. Shred the chicken just before serving and mix together.
  6. Serve in tortillas or with chips. Top with sour cream and guacamole if desired.

I used to work with a lovely Southern lady who was my boss at a local school district.  When she retired we had a last potluck party to celebrate her many accomplishments.  When we had staff meetings we often started with “get to know you better” questions.  That is when I learned that she liked North Carolina pulled pork sandwiches topped with coleslaw.  I have never been to the South and in Colorado we have lots of barbeque places, but none that I know of that make a North Carolina style pulled pork.  Quite honestly I never thought about how many different ways there are to make pulled pork, even in North Carolina they are divided about whether or not to use barbeque sauce at all, in Georgia their sauce is made with mayonnaise (huh???) then of course as you come west there is Kansas City barbeque (with a red sauce), I’m sure there is probably a special Louisiana or Creole barbeque (never looked, but should), a Southwest barbeque (smoky and spicy of course), probably a special California barbeque, and of course a Hawaiian barbeque.  I could eat my way across the country just in barbecue!

This pulled pork meal is super easy to put together since it is made in the crockpot.  The vinegar style BBQ of North Carolina meets Pacific Islander with pineapple juice to balance out the tangy with sweet. 


I learned that that a North Carolina pulled pork is cooked in vinegar and topped with sweet coleslaw lending a tangy-sweet taste to the entire sandwich.  Sounded oh so yummy to me, so my food contribution for the party was the pulled pork.  Never having made it, I found an easy crockpot recipe on Pinterest to bring to the party and she loved it.  Of course she was a true Southern lady so I’m sure she would never have admitted if it hadn’t been good, but I remember that my crock pot was empty by the end of the day so it must have been successful.

Top off your bun with some sweet coleslaw and you have a wonderful, crunchy and messy dinner that is so fun to eat!


It has been many years since I made that recipe, but lately I have had a hankering for pulled pork sandwiches topped with coleslaw thanks to a radio commercial I hear on the way to work every morning.  My entire family knows that when I cook, I make it up as I go.  If there is a recipe, I may follow the basics, but I change anything I don’t like and substitute if I feel like it.  Generally it works out pretty well, sometimes not so much.  But I enjoy the trial and error, it’s a learning experience.  So, when I decided to have my children over for dinner last weekend I decided I needed to make pulled pork sandwiches with coleslaw, in a semi-Hawaiian style.  I can never go whole hog!  When I looked at Pinterest recipes all the pulled pork sandwiches that were listed under Hawaiian style had ingredients which would make them taste sweet, piled on top of Kings Hawaiian Bread (also sweet) and topped with coleslaw . . .  more sweet than my taste buds could possibly handle.  So I went back to my trusty recipe for North Carolina pulled pork via 'Lil Blue Boo, but instead of adding all of the apple juice required, I substituted some pineapple juice instead.  We called it “Sowaiian” barbeque sandwiches.  We used basic wheat bread buns piled them high with pulled pork and topped them with coleslaw for added sweetness and crunch.  It was just the right amount of tangy-sweet my taste buds were searching for.  They were sloppy yumminess in our tummy swiftly devoured by all.  Even the leftovers disappeared quickly, which never happens in my household!

What would I change if I tried this again you ask?   I might exchange all the apple juice with pineapple juice to see if it brings out that tropical flavor more.   In the alternative I could just use the Kings Hawaiian bread for authenticity and continue using half apple juice half pineapple juice.  I could even add actual pineapple pieces to the coleslaw for that tropical flavor.  One thing I have learned, there is no wrong way to eat barbeque, try experimenting like I did; you never know what new flavor combination you will enjoy!

For the coleslaw, I just mixed together a sweet coleslaw dressing (like Marie's) with a bag of pre-packaged coleslaw.  Let it sit, refrigerated for about 20 minutes before serving.

"Sowiian" Style BBQ Pulled Pork Sandwiches


Recipe by This Bittersweet Life
Prep time: 10 minutes
Cook time: 8 hours
Total time: 8 hours, 10 minutes
Yield: 8-12

Ingredients
  • 4 lbs Pork Loin
  • 2 White or Yellow Onions
  • 2 Cups Apple Cider Vinegar
  • 1 Cup Pineapple Juice
  • 1 Cup Apple Juice
  • 1 tsp Liquid Smoke
  • 1 tsp Crushed Red Pepper Flakes
  • 1/2 tsp Cayenne Pepper
  • 2 tsp Brown Sugar
  • 1/2 bottler (about 9 oz) Regular/Classic BBQ Sauce
Cooking Directions
  1. Cut up both onions and place half of them into the bottom of the crockpot. Place the pork loin in the crockpot and cover with the rest of the onions.
  2. Mix together 1 cup of the apple cider vinegar with 1/2 cup of the pineapple juice, 1/2 cup of the apple juice and 1 tsp of the Liquid Smoke (reserve the other half of the 3 liquids for later). Pour over the roast and onions.
  3. Set the crockpot on low for about 6 hours. You'll know it's time to shred the loin when it falls apart when you stick a fork in it.
  4. Take the loin out and shred it and discard the liquid and the onions.
  5. Place the shredded pork back into the crockpot.
  6. Mix 1 cup of apple cider vinegar with 1/2 cup pineapple juice, 1/2 cup apple juice, cayenne pepper, crushed red pepper flakes, brown sugar and BBQ sauce in a bowl.
  7. Pour this mixture over the shredded pork and cook on low for another 2 hours.
  8. Then transfer shredded pork to a serving dish. Serve on buns with sweet coleslaw.
